Canned, frozen and dried foods have already become an inseparable part of our everyday lives. The modern style of living, where most family members are obliged to spend most of their days outside their houses, is probably the most crucial fact in consumers' preferences for processed food. Innovative techniques are always welcomed by fruit and vegetable processing industries, which develop ever since to ensure a year round supply of safe, nutritious, and acceptable food for the consumers.

It is now time to bring together recent advances in all fields of fruit and vegetable processing. The Symposium entitled, ‘Processing of Fruits and Vegetables' is planned to be held within the Horticultural Congress in Istanbul in 2018. Specific attention will be given to innovative processing techniques for vegetables and fruits. Retaining quality and nutritional value in processed vegetables and fruits, suitable varieties for processing, improved sustainability, and economic feasibility are topics planned to be addressed within the Symposium. The viewpoint of the consumers' is also emphasized especially with regard to their preferences for quality attributes, health and safety. Last but not the least, processed organic products and environmental friendly techniques in industrial food processing are also thought to be among the Symposium topics. The perspectives of the processing industries are welcomed, as well.
